This scenario is all too familiar for me.
Rushing around, two hours before we are supposed to be there and I remember I offered to bring an appetizer.
Or I hear that we have friends who are just popping by for a visit because they are in the neighborhood.
Before panic overtakes as I think about what in the world I will serve, I remember this quick easy recipe our family loves. It’s the perfect appetizer because it’s so easy, the flavors are familiar and you can make it in a pinch!
My mom and I have a guilty pleasure of getting jalapeño poppers when we need a quick snack before dinner and we’re out on the road. We don’t always treat ourselves to a fast food splurge, but when we do we go for jalapeño poppers. But what is even better than fried jalapeño popper goodness? Dip.
I am a HUGE fan of dips being party foods. People rarely like to eat a big hearty meal at parties because usually people are just a bit uncomfortable. Even if it’s a dinner party, I often find people don’t eat how they usually would when they’re at home. But, when it comes to dips, people are all in. It’s the perfect party food because it gives people something to do with their hands.
Unless it’s just me, I start to do weird things with my hands when I’m uncomfortable. I play with my hair, twirl my earring backs (just ask my grandma), or a handful of other awkward things when I feel uncomfortable.
So having a little plate filled with yummy treats helps me stay calm and focus on making conversation.
The holidays are filled with opportunities to attend parties and usually if it’s a party at someone’s house, you may be asked to bring a dish. If you need a quick appetizer to bring this is totally it, whether you are planning ahead or just remembered you have to bring something. Serve this easy tomato and jalapeño popper dip at your next holiday party! Add a scoop of this dip in between two layers of RITZ Crackers and you’re set.Print
- 2 8 oz cream cheese
- 8 oz sour cream
- 1/4 cup shredded cheddar cheese
- 10 oz can diced tomatoes and green chiles, drained
- 1 can diced jalapeños (at least half, more for spicier dip!)
- 1 cup bread crumbs
- Combine ingredients except for bread crumbs in bowl
- Pour into oven safe dish
- Top with bread crumbs
- Bake for 25-30 minutes until dip is bubbling around edges
- Dip RITZ crackers in and enjoy!
