Planning a brunch soon? This Ginger Strawberry Bellini is the perfect brunch cocktail for any occasion! With a fresh strawberry puré, orange juice, ginger ale and Prosecco, this is not your average Bellini recipe!
With Easter coming up and Mother's Day right behind it, my mind is definitely on recipes that are perfect for brunch, including the perfect brunch cocktails. That is how this Ginger Strawberry Bellini was born.
A quick explanation, what is the difference between a mimosa and a bellini? I wasn't quite sure at first either, but they're quite similar. Both are made with sparkling wine, champagne or prosecco and both have a variation of fruit in them. Traditionally speaking, mimosas have orange or another citrus juice while a classic bellini is made with peach puré. This drink actually has both things that traditionally make a cocktail either a mimosa or a bellini.
But, nevertheless, I'm calling this springtime cocktail a Ginger Strawberry Bellini. Remember my cherry sorbet bellini recipe? It was a huge hit when I originally posted it, so I hope y'all like this one too!
This brunch cocktail has another little something special. We've had a thing for using ginger ale in our cocktails lately. My husband, Steven, loves Zevia's ginger ale so we keep it on hand and it just sounded like a great addition to this bellini.
I looove the sweet and spicy combination that occurred. Not spicy in your traditional way of thinking like a jalapeño, but ginger has a full-bodied spice to it that is unmistakable if you're accustomed to it. Bellinis typically have one part fruit puré to two parts bubbly (Prosecco, champagne, soda, etc.). This recipe combines Prosecco, ginger ale, and a strawberry orange juice combination that is heavenly!

The strawberries are puréd in a food processor (I love this one!) and then mixed with an orange juice of your choice. I happened to have mango orange juice lying around, but regular orange juice will work just fine as well. You could also use thawed frozen strawberries for your puré if you don't have fresh ones available.

Whatever the occasion this spring, this is the perfect cocktail to help celebrate and relax with friends and family.
Ginger Strawberry Bellini
Ingredients
- 1 cup prosecco
- 1 can ginger ale
- 1 cup orange juice
- 6-8 medium strawberries hulled
Instructions
- In a food processor or blender, puree strawberries
- Optional: strain strawberry puree to remove seeds
- Pour orange juice into strawberry puree and mix with a spoon
- Pour prosecco and ginger ale into four glasses, splitting liquids four ways
- Slowly add about a fourth of strawberry orange juice mixture to each glass, the prosecco will bubble over if you add too much at a time!
- Mix cocktail with a spoon.
- Top with a splash of prosecco or ginger ale and serve!

Bellinis are one of my fav brunch drinks! I remember I had the first one ever with my mom and it was strawberry... YUM. I bet the ginger gives such a great little spice kick to the whole drink! Can't wait to try this one.
